
Carmen “Titita” Ramírez Degollado
Founder of El Bajío and ambassador of Mexican food
“Titita”, as her friends call her, was born around 1940 in Xalapa surrounded by the many aromas of herbs, coffee, spices, corn, and volcanic rock. At home, she learned to cook for her family with the vast styles of Veracruz cuisine, and later, she completely fell in love with traditional Mexican cuisine. Today, Carmen is an internationally acclaimed chef, an ambassador of delicious Mexican flavors, a promoter of customs around the Mexican family dining table, and a faithful spokesperson for culinary culture in Mexico. In addition, she has received awards and various recognition, and is a member of the Mexican Association of Restaurants and the International Association of Culinary Professionals in the United States.
