When you can’t come up with anything to cook, why not fall back on a good curry?

The world is a magical place, full of wondrous foods and flavors. India is a great illustration of this. Just take one example – curry – a dish we’re all familiar with. Curry itself, which just means sauce in Tamil, is not one thing, rather it encompasses a range of colors and flavors depending on the spices used and the region it is prepared in.

 Here we are going to share with you a recipe to make your own curry, one that you can modify to your liking – earthier, spicier, etc. It’s simple to make and can be combined with meats,  poultry, fish, grains, and legumes.

Additionally, all the ingredients provide benefits to the body.

Ingredients
  • A base of turmeric (15 g)
  • Garlic (10 g)
  • Fenugreek (15 g)
  • Ground ginger (7 g)
  • Pepper (15 g)
  • Coriander seed (45 g)
  • Cumin (30 g)
  • Black mustard seeds (30 g)
  • Nutmeg (7 g)
  • Chili powder (7 g)
  • Basil (7 g)

Steps
  1. Place everything but the chili, turmeric, and ginger in a skillet.
  2. Heat over medium heat, stirring constantly to avoid sticking.
  3. When you perceive the smell emanating from the mixture, turn it off and let it rest. Then, grind this mixture well with the remaining ingredients (you can use a pepper mill or a mortar and pestle) to turn them into a powder. 
  4. You now have your own curry!

So to get you started, here’s another recipe for a chicken dish served with basmati rice to keep the momentum going.

Curried chicken

Ingredients
  • 1 cup basmati rice
  • fresh vegetables of your choice
  • 300 g chicken
  • 1 cup coconut milk
  • 1 lime
  • 15 g of our curry
  • Garlic, onion, salt, pepper, and cilantro to taste
  • 1 tbsp. olive oil

Steps
  1. Corta en cuadritos el pollo y añádele el curry y el jugo del limón.
  2. Make sure it is well coated and let it marinate for at least ten minutes.
  3. Remove the meat from the mixture and add the excess curry directly to the rice as it cooks.
  4. Sauté the onion and garlic, then add the pepper and cilantro.
  5. Add the chicken and desired vegetables, cover with the coconut milk, and let it simmer. You’ll know it’s ready when those aromas start wafting.
