Tacos El Güero
Suadero tacos are a blast. If they are undercooked, they can be tough and excessively fatty, but if they are done well, they will be soft and bursting with flavor that lasts, just like at El Güero. Made with a cut located between the belly and the rib of the beef, suadero must be cooked for hours, which gives it that special texture. The menu also includes the typical onions, tripe and longaniza. While preparing the tacos with rich sauces and a little lemon juice, the sound of cars on the busy boulevard only adds to the urban/gastronomic experience.
