This culinary project is a world reference in the presentation of the traditions of Mexico through flavor, aroma, and texture, told from the point of view of its creators, Chef Jorge Vallejo and Alejandra Flores. Quintonil's success is due to their tenacious search to develop a cuisine oriented to the knowledge and treatment of the ingredients, as well as in the use of both contemporary and ancestral techniques, to design dishes that reflect a personal interpretation of the culture and territory of Mexico. Since 2015, Quintonil has been on The World's 50 Best Restaurants list, where it currently ranks 27th and 8th in Latin America's 50 Best Restaurants.
