Paxia
For a decade, Paxia was regarded as one of the most innovative spaces in Mexican cuisine. After a pause, it reopened in September 2021 in its new location at the Hotel Umbral, in Centro Historico, with the same vocation of exalting national dishes. In addition to having a tasting menu, Paxia represents the whole country with recipes and ingredients spanning from Baja California to Yucatán. Highlights include the traditional molcajetes, the masterful dishes with meats from land, air or sea, and the desserts, as traditional as fritters in guava sauce. The meal is complemented by internationally renowned Claudia Cabrera's cocktail bar.
