Guadiana
For more than 30 years, Guadiana has treated diners to exceptional traditional Mexican fare in its pleasant garden. Here, they make their tortillas by hand every day, using white and blue corn and nopal from Santa Ana Jilotzingo, in Mexico State. Behind each dish is a group of mayoras – female cooks who have inherited recipes passed down from generation to generation and that only they know.
