Gin Chan
Gin Chan is a traditional izakaya, a type of Japanese restaurant/bar where the only requirement is to enter with an open mind to let yourself be carried away and surprised. The basic principle, and undoubtedly one of the most endearing concepts of this ancient culture, is the omakase, which means trusting the chef, who prepares a seven-course menu on the spot, taking into account the tastes and preferences of the customers. In addition, Gin Chan receives its raw ingredients daily from the coasts of Ensenada and Oaxaca, as well as fresh fish from Japan, Norway, and Chile. And as if all this were impossible to beat, the friendliness and warmth of both the staff and the chef, Silverio Cervantes, complement this culinary experience by making attention and care central to each and every diner.
