Filigrana
Just as filigree (filigrana) is a technique used in handcrafted jewelry to weave fine gold threads into various figures, this restaurant embroiders fine flavors, aromas, and textures through dishes that give rise to exquisite narratives, ranging, for example, from a guacamole with fava beans, insect salt and crushed heirloom jewel corn tostadas to a modern mole with roasted shredded beef, baby vegetables and prickly pear. With Filigrana, Chef Martha Ortiz has created a very Mexican and very artistic venture, located, fittingly, in the emblematic Cauduro building. The result is an experience that translates to a total sensory delight.
