For 28 years, Chef Pablo San Román has been sharing the traditions of the Basque Country with Mexico and, in Ekilore, he does so through artisanal and sustainable cuisine with quality ingredients, including a few local ones like avocado, escamoles, and other seasonal products from around Mexico. The menu is made up of more than 50 dishes whose focal point is the traditional rotisserie of Donostia's kitchens, as is the enormous barrel that contains homemade cider. All accompanied, of course, by a selection of Spanish wines.
