It is unquestionable that one of Mexico’s greatest riches is the cuisine, not only due to the versatility and complexity of its dishes, but also for the wide variety of ingredients that only grow only. Cascabel pays tribute to traditional Mexican cuisine by working with endangered varieties of corn and beans to promote greater demand and ensure their survival. In her ode to Mexican culinary heritage, Chef Lula Martín del Campo delights with ancestral esquites and gorditas petroleras, ceviche negro de sierra, plantains with cream and cajeta, to name a few. Cascabel, the name for rattlesnake, represents Mexico – the flavor of the cascabel chile, the sound of the rattles used by dancers, and the mysticism of the rattlesnake.
