In her ode to Mexican culinary heritage, Chef Lula Martín del Campo delights with ancestral esquites and gorditas petroleras, ceviche negro de sierra, plantains with cream and cajeta, to name a few. Cascabel, the name for rattlesnake, represents Mexico – the flavor of the cascabel chile, the sound of the rattles used by dancers, and the mysticism of the rattlesnake.
