Blanco Colima is a fine example of what should be understood as “the art of gastronomy,” as there is no aspect of this restaurant that isn’t properly attended to – from the ingredients, to the preparation and the atmosphere. Their new chef, Gerard Bellver has taken up the challenging mission of invigorating the menu and creating dishes that fuse the flavors of Mexico and Europe.
